Ayam Pencen or Old Chicken

Ayam tua atau ayam pencen mempunyai isi yang liat dan keras. Jadi menyukarkan proses untuk mengunyahnya. Cara tradisional untuk melembutkan isi ayam yang liat dan keras itu adalah dengan meletakkan beberapa batang betik ketika merebus atau memasak daging ayam. Rebus sehingga masak. Insyaallah, isi ayam akan menjadi lebih lembut berbanding jika tidak melakukan kaedah ini.

Cara Memproses Ayam :

1. Sembelih ayam tersebut.
2. Rebuskan air dan masukkan ayam.
3. Rebus sehingga bulu ayam dapat dicabut.
4. Tutup api dan keluarkan ayam. Tarik bulu ayam sehingga licin.
5. Bakar sekeliling ayam tersebut.
6. Potong ayam mengikut saiz yang sesuai. Buang benda yang tidak dikehendaki.

Old chicken have a clay content and hardware. So it makes it difficult to chew.
